  1. Preheat oven to 325 degrees. *In this recipe the oven will not be used as a cooking method but will instead be used to keep the fish hot and crispy while you prepare multiple batches.
  2. In a large mixing bowl, place Self Rising flour, eggs, seasoning salt, Old Bay Seasoning, milk and melted butter. Mix together thoroughly until a thick batter forms. Set aside.
  3. Gently rinse fish fillets in cool water and cut into 5" pieces. Dust each piece lightly with plain flour.
  4. In a deep skillet or cooking pan, pour a thin layer of oil and heat at a medium low setting.
  5. Once oil begins to lightly bubble, dip fillets in prepared batter one by one in the batter, being sure to coat both sides evenly.
  6. Gently lay one fillet at a time in the oil. Cook each side until golden brown.
  7. Remove and place on a tray with a wire rack and place in the oven to stay crisp hot until serving.
  8. Repeat with the remaining fish, adding each piece to the oven until you are finished.
